A productive indoor vegetable garden is not built by filling every windowsill with pots. It is built by matching the crop to the light, root space, temperature, and daily attention you can realistically provide. Start With Vegetables That Fit Your Space
The best first crops are fast, compact, and useful in the kitchen. Leaf lettuce, arugula, kale, spinach, bok choy, basil, cilantro, parsley, chives, and green onions can produce well in modest containers under capable lighting. They also let you learn how your space behaves before you commit to large plants.
Fruiting vegetables can work indoors, but they demand more.
